THE KITCHEN 

We have the good fortune to have everything we need right here to prepare high quality fresh dishes, daily. Today, this is called “Km Zero products” but in our family this has been the norm for nearly four generations. 
Farmers bring us fruits and vegetables several times a week, butchers supply us with locally raised meat; and, the same goes for eggs, flour, bread and so many other products, including white truffles. The products from the farthest away are Vercelli rice - from the Tenuta Castello di Desana - and Langhe wines (even if for us, Langhe, Monferrato and Roero are the same region). In keeping with mother nature, our menu changes seasonally. We prepare typical Piedmont dishes according to ancient recipes handed down to us from our grandmothers Giulia and Rosa, and obviously from our mother Elsa; we also have dishes we call “our specialties” which you will only find in our restaurant. 
A few years ago, we made the decision to close the restaurant on Mondays and Tuesdays. This was not to take time off, but to have a few days a week dedicated to research and experimentation; in this way, we are constantly innovating and rotating in something new on a weekly basis.
